Details

White tea from Nyot Ou Tea Cooperative, Laos.

Its objective is to produce premium tea from this unique terroir through the use of agroecological practices, and to improve the livelihoods and well-being of producers, while ensuring the sustainable and ecological management of natural resources.

Forest tea: wild or ancient tea trees that were not planted by the farmers, some of them up to 15 meters high. They are left to grow undisturbed in their natural state, only removing some dead branches or diseased parts.

Forestry garden tea: planted from seeds of those wild/ancient trees following agroforestry principles. The tea trees are not cut to low bushes as is common elsewhere, but allowed to develop into tall arbor shapes with minimal trimming.

This white Tea is shade-withered and gently air-dried on bamboo baskets. It can be enjoyed young or matured in a clean, dark environment, at a relative humidity of about 50-70%.

Aroma: Fresh and natural, with meadow-like florals, light citrus hints (lemon-like), and soft green notes
Liquor: Pale yellow to light golden, clear
Taste: Smooth, soft, and gently sweet with a rounded body. Notes of fresh meadow, young greens, and subtle fruitiness (lemon, light melon) are supported by a clean vegetal character and mild minerality
Aftertaste: Clean and lingering, with a returning sweetness and a light, refreshing, slightly herbal finish

Pokyny k přípravě

Gaiwan size: 100–120 ml
Leaf amount: 4–5 g
Water temperature:
- 80–85 °C (lighter, more aromatic)
- 85–90 °C (more body and sweetness)
Steps
1. Warm the gaiwan
2. Add leaves
3. Optional rinse (very quick, 3 sec)
  - Can skip for very delicate batches
4. Infusions:
  - 1st: 15–20 sec
  - 2nd: 20–25 sec
  - 3rd: 25–35 sec
  - Later: increase gradually
Infusions: 6-8 infusions
