Phoenix dancong, Song Zhong | Oolong tea

It gives a fresh, gentle and bright floral aroma followed by natural fruity notes that make you think of the colour orange. The infusion is silky, sweet and smooth and has a good mouthfeel. Song Zhong is a representative of the lighter, less roasted ‘phoenixes’ in our offer. Orange infusion of sweet fruity aroma with a harmony of sweetness and subtle bitterness, fresh sweet, delicate and juicy pure fruity taste, sweet long-lasting aftertaste and pleasantly invigorating effect. The tea can easily last over 12 infusions.

The tea comes from a selected small-scale production from the higher elevations of Wu Dong Shan. Completely manual processing is a matter of course, as is careful traditional roasting – a very essential step in the processing of oolongs, which requires a lot of skill and experience.

• Aroma: Elegant and expressive, with floral notes (orchid-like), hints of honey, ripe stone fruit, and a light mineral freshness

• Liquor: Clear, golden to amber, bright and luminous

• Taste: Smooth and layered, with a refined balance of floral sweetness, fruity notes (apricot, peach), and a gentle roasted nuance. A soft mineral backbone adds structure, while the overall profile remains lively and elegant

• Aftertaste: Long and fragrant, with a returning sweetness (hui gan) and lingering floral notes that softly echo on the palate

• Water Temperature: 90–95 °C (slightly below boiling)

• Steeping time:

  1. Warm the gaiwan

     • Rinse with hot water to stabilize the temperature

  2. Quick rinse (optional but recommended)

     • 3–5 seconds, then discard

  3. Infusions:

     • 1st: 8–10 sec

     • 2nd: 8–12 sec

     • 3rd: 12–15 sec

     • 4th–6th: 15–25 sec

     • Later: gradually increase
