COURGETTE BOATS

Ingredients:
Courgettes – 2
Mixed vegetables – 1/4 red bell pepper, 1/4 yellow bell pepper, 8-10 small mushrooms, 1-2 slices of ginger
Soya mince – 10-15g (before soaked)
Vegan cheese – 2 tbsp
(recommended brand: Sheese, Violife)
Fresh rosemary – about 1/2 stick
Nutritional yeast – 1 tbsp
Salt and black pepper to taste
Olive oil – 1 tbsp (optional

Instructions:
1. Soak dried soya mince in warm water for up to 15 minutes, then drain it and squeeze excess water out of it;
2. Cut the courgettes in half lengthways, and use a spoon to scoop the light-coloured flesh out of the courgettes;
3. Chop vegetables into roughly the same size and mix them in a big bowl;
4. Add vegan cheese, rosemary (chopped), nutritional yeast, salt, black pepper, and olive oil (optional) into 3 and mix everything well with a spoon;
5. Preheat oven to 190 degree Celsius;
6. Fill the courgettes with the mixed and seasoned vegetables (sprinkle some more cheese on top if you like);
7. Bake for 20-25 minutes;
