STUFFED PORTOBELLO MUSHROOMS

Total time: approx. 50 min.

Ingredients:
2 slices of vegan cheese
50g tofu
1 big tomato
2 Portobello mushrooms
500g baby potatoes
1 Lemon

Intructions:
1. Preheat the oven to 190 degrees, meanwhile carefully cut the legs from the washed mushrooms.

2. Cut the legs into small pieces, along with the tomato, cheese slices, tofu.

3. Mix everything in a bowl, add drops of lemon juice, a little bit olive oil, a pinch of salt, and bit basil. Mix and put it inside mushrooms.

4. Put on a baking sheet and olive oil on it.

5. Cut the potatoes into slices, place on a baking sheet next to the portobello, and sprinkle with salt and thyme and bit oil.

6. Bake for at least 30-40 minutes.
